BEST salad for lunch today :)
Mixed greens, green kale from the farmer’s market on campus, cucumber, black beans, corn, and pomegranate seeds. I’ve been trying to cut back on high-calorie dressings so I just topped it with EVOO, thyme, parsley, salt, & pepper. Served it with an avocado & cucumber water — such a treat!
I’ve been feeling so crappy this week so I’m hoping tomorrow will get me back on track!
-Weekly hike (cut in half because of scheduling conflict, so 3 miles roundtrip instead)

I made a good lunch, too: olives and raw zucchini, broccoli, and carrots with hummus. I’ll probably pack a plum and an apricot, too. I can’t get enough fruit!

Went to an AMAZING vegan restaurant in Hollywood tonight called Cafe Gratitude. I had the “I Am Gracious” (quinoa & brown rice with hemp seed pesto, kale, sprouts, and brazil nut “parmesan”) for my meal and split a raw vegan chocolate mousse and scoop of vegan ice cream with my friend. Their entire dessert menu was gluten-free! Feeling so satisfied right now :)
